This is a salad that can be for breakfast, lunch, OR dinner. Griddled ham, homemade maple vinaigrette, and spring vegetables combine to make a salad that's balanced and perfect for any time of the day or night.

  • 1 cup oil, (whatever type works for you)
  • 1/2 cup maple syrup, pure
  • 1/4 cup balsamic vinegar
  • 1 tablespoon minced garlic
  • 1 teaspoon kosher salt
  • the juice of 1/2 lemon
  • 1 teaspoon dry mustard
  • Freshly ground black pepper
  • 1/2 pound krackus ham, thinly sliced
  • 1 head Boston Lettuce
  • 1 head Butter Lettuce
  • 1 head raddichio
  • 1 container cherry tomatoes

For the dressing, whisk together the oil, maple syrup, vinegar, and lemon juice. Then add in the salt, pepper, dry mustard, and garlic. We have found that pure maple syrup works best as it tends to have fewer preservatives but also it has a thinner texture that allows it to blend better with the other ingredients. But, if all you have is regular maple syrup, that's totally okay too! You might want to add in 1 or 2 tablespoons more oil to balance out the texture.

Tear up your lettuce and raddichio into a bowl. Halve the tomatoes and add them to the bowl too.

In a large frying pan, cook the ham. The important thing is to crisp it on both sides, so cooking should be about 2-3 minutes on each side.

Once the ham is done cooking, allow it to cool for 5 minutes but serve on the salad while it's still warm. Drizzle your homemade dressing on top and enjoy!
