Grilled Asparagus Tacos

Serve those green vegetables in a taco and your kids will gobble them up.

  • 16 asparagus spears
  • 4 corn tortillas
  • 1/4 C. Monterey jack cheese, shredded
  • 1/4 C. cheddar cheese, shredded
  • Salt and pepper to taste
  • Olive oil
  • 8 taco shells

Soak asparagus in cold water for 30 minutes. Preheat grill. Place asparagus on hot grill and cook until they start to soften and have good grill marks. Remove from grill. Place 4 spears in each taco, sprinkle with salt and pepper and add 1/4 of the cheese. Fold, brush the outside with olive oil and place the whole thing back on the grill off the heat for a couple of minutes or until the outside is crispy and the cheese is melted.
