What’s simpler than grilling up some vegetables? Probably nothing but that doesn’t means they can’t be simple and great-tasting at the same time. Here’s a recipe for some nice vegetables that can be eaten on their own or thrown into a juicy burger.

  • 2 eggplants, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 red onion, sliced
  • Salt
  • Pepper
  • Extra virgin olive oil
