  • 5 small round eggplants
  • 1/4 C. parsley, freshly chopped
  • salt
  • 1/4 C. olive oil

Rinse and trim the ends of the eggplant. Thinly slice eggplant lengthwise and drizzle with olive oil, some salt, and parsley. Grill the eggplants on the stove on high for about two minutes on each side until tender.
Place finished grilled eggplant on a plate and continue until all the eggplants are grilled. Place an eggplant on a clean plate and serve.
