  • 3 ripe avocados
  • 2 limes
  • 1 cup pico de gallo
  • 2 tablespoons olive oil
  • Pinch of salt
  • ½ cup crumbled queso fresco

Begin by cutting the avocados in half. Then remove the pits and brush the insides of the avocado with olive oil. Squeeze a half of a lime over each avocado half. Set the grill to medium heat and grill the avocados cut side down for 4 minutes. Remove the avocados from the grill and fill the avocados with pico de gallo. Sprinkle salt over the avocados and then sprinkle queso fresco over the avocados.
