Grilled Bacon and Asparagus

With spring just around the corner we thought the Spring Ingredient Recipe Contest would be just the chance to share one our most well-liked foods. This is a simple side dish that goes well with other grilled vegetables or meats.

Ingredients

  • 1-2 lb. asparagus
  • 1 lb. thick sliced bacon - 1 pound
  • sea salt

Directions

Gently wash asparagus and snap into bite-sized pieces, about 1 1/2 - 2 inches long. Discard the pithy ends. Steam the asparagus for up to 3 minutes. Any longer makes it mushy and hard to work with. Cool it quickly by immersing it in ice cold water. Drain thoroughly.

While draining the asparagus, cut bacon into bite-sized pieces and separate. In a slotted pan used for grilling, cook bacon over gas or charcoal grill, stirring until edges are starting to crisp. Use a long-handled metal spoon or spatula and wear oven mitts as things will get hot! Add asparagus and stir together until bacon is completely cooked and asparagus is heated through. Remove and put into bowl, season to taste with sea salt. Serve warm with ribs, chicken, steak or pork chops.
