  • 3.5 lbs. pork belly
  • 3 T. kosher salt
  • 1 1/2 tsp. Chinese five-spice powder, divided
  • 1 orange, zest only
  • 2 fresh bay leaves
  • 8 garlic cloves
  • 1 T. Sichuan peppercorns
  • 7/8 C. olive oil
  • 2 T. sesame oil

Use a sharp knife to score the pork's skin. Take out a bowl and mix together the salt, one tsp. Chinese five-spice powder, and the orange zest. Rub this seasoning mixture into the skin of the pork. Add the bay leaves, garlic, peppercorns, and 1/2 tsp. Chinese five-spice powder to a blender. Blend until the mixture reaches a paste-like consistency. When mixing, carefully add the olive oil. Let the pork dry uncovered overnight in your refrigerator. When ready, heat the barbecue grill and transfer the pork onto it. Brush with the sesame oil. Cook until the meat is cooked through and the pork's skin is crispy. Remember to cook both sides.
