For this recipe, you can use any kind of sausage that you'd like! Don't forget to serve these beer marinated sausages with lots of mustard for an even better taste!

  • 3 lb. uncooked sausage
  • 1 onion, thinly sliced
  • 3 C. beer
  • 1 Tbs. oil

Poke each sausage several times with a needle or pin. In a skillet large enough to hold all the sausages, layer the onions along the bottom. Add the sausages on top. Pour 3 parts beer for every 1 part water into the pan to cover the sausages. Gradually bring the pan to a simmer over medium heat, and poach the sausages for 4 to 5 minutes, or until the sausages are half cooked. Drain the sausages into a colander and separate them into links.

Heat the grill to medium high heat for direct grilling. Brush the heated grill grate with oil . Brush the sausages with oil all over and place on the grill. Grill for 4 to 6 minutes, or until the casings are crisp and brown and the sausages are cooked through. Transfer the sausages to a plate and let rest for 3 minutes before serving with mustard.
