A classic stringy, grilled cheese sandwich with a savory mushroom flavor makes a great lunch, snack, and even dinner. Serve this with your favorite side dish--even the kids will enjoy this cheesy sandwich with veggies.

  • 1 large portobello mushroom, sliced
  • 4 oz. cheddar cheese, grated
  • 4 slices sourdough bread
  • margarine

Slice the mushroom into strips and sauté in a little margarine in a non-stick pan on medium heat for about three minutes.
Grate the cheese and set aside.
Butter one side of each slice of bread.
Remove cooked mushrooms from pan and set aside.
Melt a little more margarine in same pan on medium low heat and add bread slice butter side down. Top with the grated cheese.
Top with another slice of bread, butter side up. Check to see if the bottom is golden and flip.
Let the second side brown a little. Transfer to a plate, cut in half, and serve.
