A grilled cheese is anything but plain when you use this recipe.

  • 4 oz. Swiss cheese, shredded
  • 4 oz. Cheddar cheese, shredded
  • 1/3 C. mayonnaise
  • 1 Tbs. prepared mustard
  • 1 Tbs. chopped green onions
  • 8 slices bread
  • 1/4 C. butter, softened

Combine cheeses, mayonnaise, mustard, and chopped onion. Spread mixture on one side of 4 of the bread slices to within 1/4-inch of edges. Top with remaining bread slices. Spread softened butter on the outer sides of the sandwiches. Cook over medium heat in a hot skillet or griddle until golden brown, turning once.

  • I have not tried this yet, should not because I know I will love it and I need to try much more to lower my cheese intake.... cholesterol and I adore any, any, any kind of cheese, the creamier the better in my opinion... such as triple cream brie, name one, just name any cheese ( I LOVE IT). I am not finding choices of good fat free cheese in my neighborhood....... grrrr. I might break down....(twist my arm) and use the Kraft 2% ones, you will not miss the butterfat.... cheese fanatic/expert giving advice here...... grin.

  • I haven't tried the shredded cheese version but have used slices of different kinds of cheese, spreading mayo on inside of sliced bread, and adding sliced tomato and onion. sometimes added deli ham or crisp bacon slices before grilling. Awesome !! gonna try the shredded version yum!

  • Except for the green onion, I think this sounds great! Many chefs add condiments to mayo to flavor them up.
