  • 1lb boneless chicken breast, cut into strips
  • 3 tablespoons olive oil
  • 1/3 cup fresh basil, chopped
  • 2 cloves garlic, minced
  • 1 tablespoons fresh lemon juice
  • salt
  • pepper
  • 1 large head Romaine lettuce, washed and chopped
  • 10oz fresh mozzarella pearls
  • 10oz cherry tomatoes, halved
  • 6oz yellow cherry tomatoes

In a bowl, mix together the oil, basil, garlic and lemon juice. Season with salt and pepper and pour into a ziplock bag. Add the chicken, close and shake to coat the chicken well. Marinate for 2-3 hours. Preheat a grill of panini press and cook the chicken until tender and cooked through. Transfer to a plate and let cool. In a large bowl, combine the rest of the ingredients and then add the chicken. Toss to combine. Top with favorite dressing.
