  • 3 Tbsp Olive Oil
  • 1½ Tbsp Red Wine Vinegar
  • 2 tsp Chili Powder
  • ½ tsp Paprika
  • ½ tsp Onion Powder
  • ½ tsp Garlic Powder
  • Cayenne Pepper
  • Salt & Freshly Ground Black Pepper
  • 1 lb Skinless, boneless chicken breast halves - cut into 1 ½" pieces
  • Skewers
  • 1/2 Green Pepper, thinly chopped
  • 1/2 Red Pepper, thinly chopped
  • 1 Zucchini, chopped

Whisk together the olive oil and vinegar in a small bowl. Add chili powder, paprika, onion powder, garlic powder, cayenne pepper, salt, and black pepper. Put the chicken into a shallow baking pan and add the sauce. Cover the pan and let the chicken marinate for at least an hour.
Preheat the grill for medium to high heat. Place chicken onto skewers with your zucchini, red pepper, and green pepper.
Brush a light oil on the grill grate. Grill skewers for 10 to 15 minutes, or until chicken is thoroughly cooked.
