  • 1 pound boneless, skinless chicken breasts, cut into chunks
  • 1 tbs. extra virgin olive oil
  • 1 tbs. fresh-squeezed lemon juice
  • 3 tbs. garlic paste
  • ½ tsp. freshly ground black pepper
  • 1/8 tsp. cayenne pepper
  • ½ tsp. paprika
  • ½ tsp. ground cumin
  • 1 red bell pepper, cut into chunks
  • 1 red onion, cut into chunks
  • 1 zucchini, sliced
  • ½ seedless cucumber, finely shredded
  • 1 clove garlic, mashed
  • ½ tsp. salt
  • 1 C. plain Greek yogurt
  • 2 tbs. extra virgin olive oil
  • 1 tbs. fresh mint, minced
  • 1/8 tsp. freshly ground black pepper

Combine olive oil, lemon juice, garlic paste, ground pepper, cayenne pepper, paprika and ground cumin in a shallow dish. Stir until ingredients are well blended. Add chicken to dish and stir to combine. Cover and refrigerate for 2 hours.

To make sauce, place garlic in a small bowl and mash. Mix in salt, yogurt, olive oil, mint, ground pepper and cucumber. Set sauce aside.

Warm grill over medium-high heat and lightly oil grate. Evenly thread chicken, red bell pepper, onion and zucchini onto each skewer. Add to grill and cook for 5 minutes on each side or until chicken is no longer pink. Serve with sauce.
