  • 2 boneless and skinless chicken breasts
  • 6 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon fresh oregano
  • ½ teaspoon pepper
  • 3 cups Romaine lettuce, chopped
  • 5 small tomatoes, cut into fourths
  • 1 cup croutons
  • 3 hard boiled eggs, sliced

Prepare the grill, heating it up to 350F. Coat the chicken with 1 tablespoon of oil and grill on each side for about 3-4 minutes each, or until cooked through. Let rest 10 minutes and slice. In a bowl, mix together the lemon juice, 1/3 cup oil, oregano and pepper. In a bowl, combine the remaining salad ingredients, toss and coat with the lemon dressing mix.
