This delicious starter salad can double as an entree with plenty of grilled chicken! Use tomatoes, hard boiled eggs, and red onions to flavor this salad before adding dressing.

  • 4 skinless, boneless chicken breast halves
  • 1 Tbsp. olive oil
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1/3 C. halved cherry tomatoes
  • 3 hard boiled eggs, chopped
  • 1 red onion, sliced
  • 2 Tbsp. sour cream
  • 3 Tbsp. mayonnaise
  • 2 Tbsp. lemon juice
  • 4 C. salad greens

Preheat the grill to medium high. Brush the chicken with oil and season with salt and pepper. Put the chicken on the grill and cook 6 minutes on each side. Let stand 10 minutes and chop into pieces. Put the chicken in a salad bowl with the tomatoes, eggs, greens, and red onion. Toss to mix. Combine the sour cream, mayo, and lemon juice in another bowl. Add the dressing to the chicken mixture and toss to coat.
