This recipe is a great way to turn leftover grilled chicken into an entirely new and delicious meal. The apple cider vinegar adds a nice touch of sweetness but can be replaced with any other vinegar of your choice.

  • ½ C. pecan halves, toasted
  • 1 ½ C. grapefruit, segmented and chopped
  • 1 C. grilled chicken, cut into pieces
  • 2 C. butter lettuce
  • ¼ C. vegetable oil
  • 2 T. apple cider vinegar

In a small bowl, whisk together vegetable oil and apple cider vinegar until combined.
In a large bowl, drizzle vinaigrette over butter lettuce and toss to coat. Toss until vinaigrette is evenly distributed over all the lettuce.
Add pecans and grapefruit. Toss to coat.
Top with grilled chicken before serving.
