This dinner looks and tastes impressive without much effort or time! Serve the fish with a side of mixed vegetable rice pilaf and grilled asparagus with red pepper aioli. This recipe also works well with salmon steak or grilled chicken breasts.

  • 1 C. pecans, halved
  • 2 C. cilantro sprigs
  • 2 cloves garlic, sliced
  • 2 Tbs. fresh lime juice
  • 1/3 C. oil
  • pinch chili flakes
  • 4 (6-8 oz.) halibut steaks, patted dry
  • 2 Tbs. oil
  • salt and pepper, to taste

In a blender or food processor, combine the pecans, cilantro, garlic, lime juice, 1/3 C. oil, and chili flakes. Pulse until finely chopped and well combined. Add some more oil if the pesto is too thick. Transfer it to a bowl and set aside.

Brush each halibut steak with 2 Tbs. oil and season with salt and pepper. Oil the grill and grill the steaks for 3 to 4 minutes on each side, or until cooked through. Top each steak with a dollop of pesto.
