  • 4 ears of corn on the cob, left in the husk
  • olive oil, enough to brush the corn
  • salt
  • pepper

Cut off the excess hanging from the ends of the cob and any excess husk that's loose. Leave the remainder of the husk on the corn. Soak the cobs in a pot of cold water for 15 minutes. While the corn soaks, preheat the grill to a medium temperature. Remove the corn from the water and shake off excess water. Pull back the husks of the corn and only remove the silk. Brush the kernels with olive oil and sprinkle with salt and pepper. Cover back up with the husk and grill for 30 minutes, remembering to turn every 5 minutes to prevent charring. Remove from the grill, peel, cut off the ends and serve.
