  • 3 zucchini, sliced into 1/2 inch planks
  • 3 ears corn, husks and silks removed
  • 4 Tbs. oil
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1 Tbs. lime juice
  • 1 Tbs. apple cider vinegar
  • 1/2 Tbs. honey
  • 1/4 tsp. red pepper flakes
  • 1/3 C. feta cheese crumbles

Heat the grill to medium high. Drizzle the corn and zucchini with olive oil and sprinkle with salt and pepper. Put them on the grill and turn every 4 minutes to evenly cook. Remove the corn and zucchini from the grill. Cut the kernels from the corn and put them in a large bowl. Cut the zucchini into small strips and put them in the same bowl as the corn. In another bowl mix together the vinegar, lime juice, honey, red pepper flakes, salt, pepper, and 1 Tbs. oil. Pour this mixture over the corn and zucchini mix and sprinkle with feta cheese.
