Grilled Endive

Belgian endive makes an incredibly elegant presentation. First, there's the surprise of a grilled green. Then there's the lovely appearance on the plate. Grilled endive makes a perfect accompaniment to almost any grilled dish.

Ingredients

  • 4 heads Belgian endive
  • extra virgin olive oil
  • coarse salt & freshly ground black pepper
  • shaved Parmesan cheese or balsamic vinegar (optional)

Directions

Prepare a medium hot fire in the grill. Slice the endive in half lengthwise; do not trim the root end. Brush with olive oil. Grill the endive until tender and lightly grill marked, 4 to 7 minutes per side. To serve, sprinkle with salt & pepper to taste. If desired, top with a sprinkling of shaved parmesan or balsamic vinegar.
