A grilled flank steak is upgraded with a seriously delicious and gourmet blue cheese crust, and it's a lot easier than it sounds! Try it out for your next romantic dinner or weekend family dinner.

  • 2 lb. flank steak
  • 2 Tbs. olive oil
  • 1 onion, chopped
  • ⅓ C. blue cheese, crumbled
  • 2 Tbs. bread crumbs

Heat 1 Tbs. of oil in a large frying pan over medium heat
Add onions and cook until soft, then remove from pan and set aside
Cut the steak into four, or divide as you see fit (try getting steaks as evenly distributed as possible)
Season with salt and pepper
Heat another Tbs. of oil and cook the steaks until brown on each side (they will finish cooking in the oven)
Set the steaks aside on a baking sheet
In a small bowl, combine blue cheese, bread crumbs and onions
Spoon the mixture evenly onto the tops of the steaks and broil for about 5 minutes, or until the steaks reach your desired rareness/doneness
