  • 6 oz. ham, thinly sliced
  • 4 cage-free eggs
  • 1 1/2 oz. mozzarella cheese, shaved
  • 2 T. margarine
  • salt and ground pepper
  • 3 T. vegetable oil

Preheat the oven to 300 degrees Fahrenheit. Lay the bread slices on the counter and arrange the ham and cheese on 4 slices. Close the sandwiches.
Melt one tablespoon of margarine in a skillet with one tablespoon of the oil. Brush the sandwiches on one side with the melted margarine and oil, then add to the skillet, buttered side up. Cook over medium heat for four minutes, turning over once, until the cheese is melted and the sandwiches are golden.
Transfer the sandwiches to a baking sheet and keep them warm. Melt the remaining one tablespoon of butter in one tablespoon of oil in the skillet. Crack eggs and cook over medium heat for about two minutes until the whites are set and the yolks are still runny. Top each sandwich with an egg and season with salt and pepper.
