Jerk chicken is traditionally quite spicy, but feel free to reduce the level of heat in this recipe by adjusting the quantity of jalapeno pepper used. Once you try it, there’s no denying this spice blend tastes great on chicken!

Ingredients

  • 3 lbs. chicken, equal weight of legs and thighs
  • 1 onion, chopped
  • 2 cloves garlic
  • 1 jalapeno chile, seeded
  • 2 tsp. allspice
  • 2 tsp. black pepper
  • 1 tsp. nutmeg
  • 1/2 tsp. cinnamon
  • 1 T. fresh thyme or 1 teaspoon dried
  • 2 tsp. salt
  • 3 T. vegetable oil
  • 3 T. lime juice
  • 3 T. soy sauce

In a food processor, mix all ingredients except chicken and process into a paste. Smear this all over the chicken pieces. Then, place the chicken in a plastic bag and refrigerate from 2 to 24 hours. To cook, remove chicken from refrigerator while grill heats. Grill about 10 to 15 minutes on medium-high heat, until chicken is browned on all sides. When nicely browned, reduce heat, cover, and continue to cook 20 to 30 minutes, turning as needed to prevent burning until done.
