  • 2 garlic cloves
  • salt
  • 1 lb. lamb from the leg, trimmed and cut into 3/4-inch chunks
  • 3 Tbs. olive oil
  • 2 Tbs. chopped mint
  • 1 tsp. chopped thyme
  • pepper

Chop the garlic finely. Sprinkle garlic with a pinch of salt and mash it with the side of a large chef's knife into a fine paste. In a large bowl, toss the lamb with the garlic paste, oil, herbs and salt and pepper to taste. Cover and marinate at room temperature for 1 hour. Preheat grill. Thread meat on the skewers. Place the pieces close together without crowding. Grill lamb for 3 minutes or until browned. Turn meat over and cook 2-3 minutes more or until browned on outside but pink in center, 5 more minutes. Serve hot.
