  • 4 small boneless, skinless chicken breast halves
  • 1/4 C. mayonnaise
  • 2 Tbs. grated Parmesan cheese
  • 8 slices bread
  • 1 medium tomato, slice
  • 4 lettuce leaves
  • Lemon pepper marinade
  • 1 Tbs. lemon rind, grated
  • 3 Tbs. lemon juice
  • 3 Tbs. oil
  • 4 cloves garlic, crushed
  • 1 Tbs. black peppercorns, cracked
  • 1/2 tsp. salt

Mix all the ingredients for the lemon pepper marinade in a bowl. Place the chicken in a large resealable bag and pour all but 2 Tbs. in the marinade. Turn to coat well and refrigerate for at least 30 minutes. In another bowl, mix the mayonnaise, Parmesan cheese, and 2 Tbs. marinade. Remove the chicken from the marinade and grill the chicken over medium heat for 6 to 7 minutes on each side, brushing with the marinade. Grill the bread slices and spread the mayonnaise evenly on 4 bread slices. Top with chicken, tomato, lettuce, and remaining bread.
