Ingredients

  • 3 lb. piece of salmon cut into 4 equal servings
  • 2 Tbs. Dijon mustard
  • 1 minced garlic clove
  • 1/2 C. (real) maple syrup
  • 2 Tbs. olive oil
  • salt and pepper to taste

Directions

Prepare the grill and brush with oil before it is hot
Allow the charcoal (or gas) grill to get hot before adding the salmon
Whisk the sauce ingredients together in a glass dish, remove 1/2 the sauce
Place the fish in the dish and turn the salmon in the sauce
Allow to marinade 10-20 minutes
Discard the used sauce
Ready to grill, place the salmon skin side down and grill 4-5- minutes
Brush with some of the sauce
Turn the fish and brush with the remaining sauce, allow to cook 4 minutes
Remove to a large platter and cover 
Serve
