Grilled Marinated Citrus Chicken Breasts

- 2 Tbs. olive oil
- 1 C. fresh orange juice
- 1/2 C. fresh lemon juice
- 4 cloves garlic, minced
- 2 tsp. fresh rosemary, minced
- 2 tsp. sea salt
- 4 skin-on, bone-in chicken breasts
- 2 oranges, quartered
- 2 lemons, quartered
- fresh parsley
In a large bowl, combine the 2 Tbs. oil, orange juice, lemon juice, garlic, and rosemary. Stir in 2 tsp. salt and add the chicken breasts. Turn the chicken to coat, cover, and chill overnight.
Heat a gas grill to medium and remove the chicken breasts from the marinade. Set the marinade aside. Place the chicken on the grill skin side up. Cover and grill until slightly charred and almost cooked through, about 20 minutes, without flipping. Turn chicken. Brush the orange and lemon quarters with oil and arrange them around the chicken on the grill. Continue to grill until the chicken is golden brown and the fruit is caramelized, about 10 to 15 more minutes.
Meanwhile, bring the marinade to a boil in a pot and cook until its reduced to a glaze. Season with salt. Transfer the chicken to a plate and surround with grilled fruit. Spoon the glaze over the chicken and garnish with parsley.
