Grilled Mozzarella And Eggplant Bites

- 1 eggplant, sliced into 20 slices
- 2 T. olive oil
- 1 T. minced garlic
- 1 tsp. salt
- 20 mini mozzarella balls
Heat the girl to medium high, and place a sheet of aluminum foil over the rack.
Mix together the oil, garlic and salt, and brush it over the eggplant slices. Put the slices on the grill and cook until the eggplant starts to get a little crispy, flipping halfway through.
Next, top each slice with a mini mozzarella ball. Close the grill and cook for 3-5 more minutes
