Microgreens are the first shoots of plants and they are packed full of nutritious flavors that other greens can't beat! If you don't have time to grill your mushrooms, you can saute them in the skillet instead.

  • 1 tsp. butter
  • 3 eggs
  • 1 Tbs. oil
  • 1 handful fresh microgreens
  • 1/4 lb. mushrooms
  • salt and pepper, to taste

Heat your grill to medium heat and brush the mushrooms with oil. Grill the mushrooms for 4 to 5 minutes. Allow them to cool and chop coarsely. In a skillet, heat the butter. In a bowl, whisk together the eggs, salt, and pepper. Add it to the skillet and cook until curds form, about 3 to 4 minutes. Gently stir until the eggs are almost set, then pat the eggs down into an even layer. Add the microgreens and mushrooms to one half of the omelet. Fold half the egg over the other and slide it onto a plate.
