Grilled Peaches with Mint and Basil Ricotta

A summertime family favorite! This dessert or summer side dish has it all. Sweet, savory, smooth, and crunchy! The secret to this great recipe is the use of fresh herbs. They add an unexpected surprise that just linger on the tongue.

Ingredients

  • 1 1/2 C. ricotta cheese
  • 1 C. basil
  • 1 C. mint
  • 4 ripe peaches
  • 1/4 C. chopped pistachios

Directions

In food processor, pulse ricotta, basil, and mint until herbs are finely chopped (about 10 pulses). Empty into a small bowl and set aside. Cut peaches in half, remove pit, and place on medium hot grill for 60 seconds on each side. Remove from grill and place dollop of ricotta mixture in middle of peach. Sprinkle with choppedĀ pistachios.
