Grilled Peppers with Capers
Ingredients
- 2 Tbs. olive oil, plus some for brushing
- 5 large red bell peppers, halved, stemmed, seeded and deribbed
- 2 Tbs. capers
- 1 small red onion, thinly sliced
- 2 garlic cloves, minced
- Kosher salt and freshly ground black pepper to taste
Directions
Preheat grill to high. Lightly oil bell pepper halves. Place bell peppers on grill, cut side down, cover and lower heat to medium-high. Grill, turning when one side is slightly blackened and continue cooking until skin side is slightly blackened as well. Remove from grill. When cool enough to handle, cut the peppers into wide strips. Place pepper strips, red onions and capers in a bowl. Add olive oil, vinegar, garlic and salt. Toss well and chill
Serves 4 to 6.
