Grilled Pineapple Salsa
Serving Size / Yield
- 1 pineapple, de-skinned, cored, and cut into rings
- 2 jalapenos, de-seeded and de-ribbed, diced
- 1 sm. red onion, diced
- 2 Tbs. cilantro, chopped
- 1 lime, zested and juiced
- salt and pepper, to taste
Grill pineapple rings over high heat on a gas grill. Flip after two minutes. Once they become very fragrant (about 5 minutes total cooking time), remove them from the heat and allow them to cool. If you have time, chill them in the refrigerator for about 30 minutes. This is to prevent the pineapple from cooking the other ingredients.
Mix all the remaining ingredients together and serve.
