Grilled Plantain with Ice Cream

Ingredients
- 2 plantains
- 1 stick butter
- 1/2 C. brown sugar
- 1 qt. vanilla ice cream
- 1/2 qt. fresh raspberries
- 1 sm. bunch fresh mint leaves.
- 1 jar caramel sauce
- cooking spray for grill
Directions
Cut plantains in quarters (first in half width-wise then in half length wise). In a sauce pan over low heat, melt butter. Be careful not to brown the butter. Once melted, slowly add the brown sugar to make a sauce. Once mixture is done, you will put very little cooking spray on the grill and add the plantains. Brush the sauce over the top and wait 2 minutes then turn plantains over and brush with more sauce. Once they are done. Warm up the caramel sauce. Plate the plantains by topping with a scoop of ice cream and hot caramel. Put a few raspberries on the side of the plate with a sprig of fresh mint.
