Ingredients
- 1 lb. chicken thighs
- ½ C. pumpkin puree
- 2 T. maple syrup
- 2 T. chicken broth
- 1 T. rice vinegar
- Salt and pepper to taste
- ½ tsp. Garam masala
- ½ tsp. ginger
- Dash cayenne pepper
- ½ lb. pumpkin, peeled, chopped, and grilled

Directions
Preheat oven to 450 degrees. In a bowl, whisk together pumpkin puree, syrup, chicken broth, vinegar, salt, pepper, Garam masala, ginger, and cayenne. In a greased baking dish, add chicken and pumpkin pieces; pour mixture over top and bake for 40 minutes until chicken is cooked through and tender.
