This version of quesadillas is stuffed with cheesy chicken, onion, beans, chilies, and avocado and the whole quesadilla is cooked on the grill. Be sure to serve the quesadillas with salsa, guacamole, or sour cream.

  • 1 ¾ pounds boneless skinless chicken thighs
  • 12 tortillas
  • 1 can diced green chilies
  • 1 chopped onion
  • 1 ½ cups shredded cheese
  • 1 can black beans
  • 1 diced avocado
  • 1 packet taco seasoning

Sprinkle the chicken with taco seasoning and allow the marinate to sit for about 15 minutes. Slightly oil the grill grates and grill the chicken over medium-high heat for 10 minutes per side. Then cut the chicken into small bite-size pieces. Place two tortillas on the grill and sprinkle with cheese. Add the chicken, chilies, beans, avocado, and onion. Top each tortilla with another tortilla and grill for 3 minutes per side. Repeat this until the ingredients are all used. Cut into triangle wedges and serve with salsa.
