Grilled Salmon

A close friend gave me this great grilled salmon recipe!

Ingredients

  • 1 onion, finely chopped
  • 2 lemons, cut into thin slices
  • 1/4 C. chopped fresh herbs
  • 1 lb. wild salmon fillet
  • salt and pepper to taste

Directions

Heat a grill to medium heat. On a piece of aluminum foil, spread half of sliced onion, lemons and herbs about the length of the salmon. Lay salmon on top. Add salt and pepper to taste. Cover with remaining onion, lemons and herbs. Cover with a second piece of aluminum foil and crimp sides together. Place on grill and check after about 10 minutes. It's done when salmon is pink in the middle and can be flaked with a fork. Be sure not to overcook.Serve with 1 cup whole-grain pasta and a salad with 100 calories of dressing.
