Ingredients

  • 2 lbs. scallops
  • 1/3 cup corn off the cob
  • 1/3 cup edamame
  • ¼ cup cherry tomatoes, sliced
  • 1 tbsp. parsley, minced
  • 1 tbsp. extra virgin olive oil
  • 2 tbsp. chipotle sauce
  • 1 tbsp. extra virgin olive oil

Directions

Place grill pan over high heat
Drizzle olive oil on pan and place scallops in pan
Allow scallops to cook for about 2 minutes on each side
Combine all vegetables in a bowl and pour in chipotle sauce
Toss vegetables until coated
Serve scallops over vegetables
