Grilled/Smoked Game Hens

Ingredients
- 2 game hens
- 2 Tbs. garlic oil
- 1 Tbs. garlic seasoning
- 2 Tbs. seasoned salt
- 1 tsp. smoked paprika
- 1 tsp. Old Bay seasoning
Directions
Clean hens - pat dry. Split each down back with scissors (so it will lay flat on grill) . Rub with garlic flavored olive oil on all sides. Sprinkle on all dry seasonings, rubbing on both sides.
Preheat smoker (we have a Trager Grill) to 325 degrees for about 20 minutes. Then, turn grill to smoke (225 degrees). Place hens skin side down opened flat for approximately 2 hours. Turn and cook 2 hours. on the other side.
Alternative: may preheat an aluminum covered brick in oven and place brick on hens while cooking - helps crisp up the skin.
