These steak fajitas are made on the grill and basted with a tangy Italian and lime dressing. Add your favorite vegetables for an even more loaded fajita! Serve them on warm tortillas and paired with rice.

  • 1 lb. beef top sirloin steak, boneless, cut 1-in. pieces
  • 1/3 C. Italian dressing
  • 3 Tbs. fresh lime juice
  • 2 green or red bell peppers, cut into quarters
  • 2 medium onions, cut crosswise into 1/2-in. slices
  • 1/4 tsp. salt
  • 8 flour tortillas, warmed
  • salsa

Soak 8 9-in. bamboo skewers in water for 10 minutes, then drain. Thread the beef onto the skewers. In a bowl, combine the dressing and lime juice. Brush onto the peppers, onions, and beef. Put the vegetables on the grill over medium heat. Grill, uncovered, for 12 to 15 minutes, or until tender, turning occasionally. 5 minutes into cooking the vegetables, begin to grill the beef. Grill for 7 to 9 minutes, or until desired level of doneness is achieved. Remove the beef from the skewers and season with salt. Serve with tortillas, salsa, and vegetables.
