  • 6 large red bell peppers
  • 1 diced onion
  • 3 minced garlic cloves
  • 1 can diced tomatoes
  • 1 can black beans
  • 3 cups cooked rice
  • 1 cup corn
  • 1 ½ cups shredded cheddar cheese
  • 1 teaspoon chili powder
  • 2 teaspoons cumin
  • 1 teaspoon salt

Cut the tops of the bell peppers off with a sharp knife and then remove the stems and seeds. Set the peppers aside. In a skillet, cook the chopped onion over medium-high heat until it is tender. Lower the heat and stir in the tomatoes, chili powder, cumin, and salt. Cook for 5 minutes before stirring in the cooked rice, corn, and black beans. Fill each bell pepper with the stuffing and place the peppers over direct heat on the grill. Cook for 20 minutes. Sprinkle cheese over the peppers and cook for 2 more minutes. Remove from the heat and serve.
