Sweet potatoes are yummy, but even better on the grill! The smokiness combined with lemon juice, brown sugar, and more create a tasty side dish made right on the grill!

  • 2 lbs. of sweet potatoes
  • salt and pepper to taste
  • 3-4 Tbs. olive oil
  • 2 Tbs. brown sugar
  • 1 tsp. lemon zest
  • 2 Tbs. lemon juice
  • 1/4 C. olive oil

Preheat the grill to medium high heat and oil the grill grates
While the grill is warming up, peel the potatoes and then slice them lengthwise into 1/4 inch thick pieces
Coat them with the 3-4 Tbs. of olive oil, brown sugar, and sprinkle with salt and pepper
Combine the lemon zest, lemon juice, and 1/4 cup olive oil into a bowl
Once the grill is hot enough, place the sweet potatoes onto the grill grates
Cover the grill and cook the sweet potatoes until both sides get grill marks
This takes about 3 to 6 minutes for each side, depending how hot your grill is
After they are cooked, toss the potatoes in the bowl with dressing and serve
