  • 6 (6 oz.) tuna steaks
  • 2 Tbs. olive oil
  • 1/2 tsp. salt
  • 1/2 tsp. freshly ground pepper
  • 1 can (2 oz) anchovies, drained and rinsed
  • 10 black olives, pitted and finely chopped
  • 2 cloves garlic, finely chopped
  • 1/4 C. white wine
  • 2 Tbs. chopped parsley
  • 2 Tbs. lemon juice
  • 2 Tbs. capers, drained
  • 1/2 tsp. salt
  • 1/2 tsp. freshly ground pepper

Brush the tuna steaks with the olive oil and season with salt and pepper. Grill, broil, or pan fry to desired degree of doneness. Combine anchovies, olives garlic, white wine, parsley, lemon juice, capers and salt and pepper for sauce in an electric blender or food processor and process until smooth. Spread a Tbs. of the sauce on each tuna fillet after they have finished cooking and serve immediately, with additional sauce on the side. Serves 6.
