A great grilled tuna dinner is refreshing and light, also just very satisfying to the stomach. Top it with a little earthy pesto sauce and your meal will be set.

  • 2 salmon flanks
  • 1 cups basil leaves
  • 1/3 cup parmesan cheese, grated
  • 2/3 cup extra virgin olive oil
  • ΒΌ cup pine nuts

Toss basil, parmesan cheese, and pine nuts in a food process
Begin processing while slowly adding 1/3 cup olive oil
When done, set aside
Pour 1/3 cup of olive oil on grill pan over high heat
Place salmon flanks on pan, cook for 3 minutes on each side
Remove from heat and slice into squares
Drizzle pesto over salmon
