Grilled Vegetable Sandwich
- Brownberry or other firm whole-wheat bread
- American or low-fat cheddar cheese
- Fresh mushrooms, sliced
- Tomato slices
- Fresh spinach leaves
- Alfalfa sprouts
Butter 2 slices of bread on 1 side. Place both slices, buttered side down, on hot griddle on stove top, and top with cheese (open face). Grill until bread is browned and cheese melts. As soon as cheese melts, immediately layer vegetables over cheese on one piece of bread.
Top with other slice of bread, cheese side in. Remove from griddle.
Yield: 1 sandwich
