Ingredients

  • 2 zucchini, thinly sliced
  • 1/2 purple onion, thinly sliced
  • 1 red pepper, thinly sliced
  • 10 shiitake mushrooms, thinly sliced
  • 1 C. eggplant, diced
  • 1 Tbs. olive oil
  • 1 clove garlic, minced
  • 1 tsp. black pepper
  • 1/2 tsp. salt
  • 4 onion rolls
  • 1/4 C. grated Parmesan cheese2 zucchini, thinly sliced

Directions

Place some foil on the grill and carefully lay zucchini, onion, red pepper, mushrooms, and eggplant on the foil.  Sprinkle with oil, garlic, salt, and pepper. Grill until tender, then remove vegetables, place on rolls, and sprinkle with cheese.
