  • 2 cans refried beans
  • 2 cups cheddar cheese, shredded
  • ½ cup onion, chopped
  • 10 flour tortillas
  • 2 cups cooked rice
  • 10 oz tomato sauce
  • 1/3 cup water
  • ¼ teaspoon chili powder
  • ½ teaspoon onion powder
  • ½ garlic powder
  • ¼ teaspoon paprika
  • ¼ teaspoon cayenne pepper
  • lettuce, shredded
  • 1 yellow bell pepper, sliced
  • 1 red bell pepper, sliced
  • olive oil

In a medium pot, add tomato sauce, chili powder, onion powder, garlic powder, paprika, cayenne pepper, and water. Simmer for 15 minutes. Add the rice and chopped onion and cook rice as usual. In a skillet, add the oil and once heated, sauté the bell peppers. Heat the beans and spread onto tortilla. Add the rice and sautéed peppers and lettuce. Roll, press in a panini maker and enjoy!
