Fire up the grill! We've got the perfect way to serve our favorite seasonal produce: Zucchini! This recipe would work well for eggplant and squashes too!

  • 1 large zucchini, sliced into 1/2" thick rounds
  • 1 Tbs. olive oil
  • 1 tsp. paprika
  • 1 lb. butter, softened
  • 6 cloves garlic, pressed
  • 1 Tbs. parsley, minced
  • salt and pepper to taste

In a mixing bowl, place the softened butter, parsley and garlic
Mix until the herbs and butter are completely combined
Heat the grill to medium high heat. Rub the zucchini with oil, then sprinkle with paprika, salt and pepper
Place on the grill and cook for 10 minutes
Flip and cook the other side for 10 minutes or until the zucchini is tender
Serve hot with a dollop of garlic butter
