These stuffed bell peppers make a great side or creative appetizer. The peppers are bursting with flavor so you won’t need to prepare another elaborate dish to accompany them!

  • 1 ½ cups brown rice
  • 2 ½ cups shredded mozzarella cheese
  • ½ cup chopped parsley
  • 4 chopped scallions
  • 6 bell peppers
  • 8 ounces ground turkey
  • 1 tablespoon lemon juice
  • 2 minced garlic cloves
  • ½ cup corn kernels
  • ½ cup black beans

Fill a large pan with 2 ½ cups water and then add the rice and ¼ teaspoon salt. Boil the pot and then lower the heat. Cover the pot and simmer for 45 minutes. Fluff the rice and then move the rice to a bowl. Cut the top off each pepper and discard the seeds. Mix the turkey with 1 ½ cup cheese, the rice mixture, parsley, corn, beans, scallions, lemon juice, garlic, and a dash of salt and pepper. When the bowl is well mixed stuff each pepper with the mixture. Place the peppers in a baking dish and top with the remaining cheese. Bake for 50 minutes.
