Ground Turkey Soup
Ingredients
- 1 1/2 lb. ground turkey
- 1/2 C. chopped onions
- 1 Tbs. ground beef bouillon
- 2 cans of V8 tomato juice
- 5 large potatoes
- Fresh carrots
- Favorite frozen vegetables
Directions
Sauté 1 ground turkey in a skillet. Add chopped onions. Sprinkle in ground beef bouillon. Stir continuously, gently breaking up the meat as you go. Add salt and pepper, to taste. Transfer to a Dutch oven, or 4-quart pan, mix in V8 tomato juice. Chop five large potatoes into medium size pieces, cut up some fresh carrots, and mix in a large bag of your favorite frozen vegetables. Add this into your pan. Cook on a medium heat for about 1 1/2 hours. Potatoes and carrots should be soft, not mushy. Great for leftovers, they are almost better than when fresh. Only 2 pans used and total prep time from start to finish is only about 2 hours. You don't have to baby-sit it! Happy eating!
