Take a childhood favorite and make it all grown up with the addition of bacon. Pair it with some tomato basil soup for a childhood meal with an adult twist.

  • 8 slices white bread, 1/2-in. thick
  • 4 tsp. olive oil
  • 1/4 lb. cheddar cheese, sliced thin
  • 8 slices bacon
  • 1/4 lb. Monterrey Jack cheese, sliced thin

Brush one side of each slice of bread with 1/2 tsp. oil. Lay the slices, oil side down, on a clean work surface and top with the cheese, dividing the cheese evenly. Put 2 slices bacon on each piece of bread. Top with the Monterrey Jack cheese. Complete the sandwiches with the top slice of bread.

Heat a griddle or large skillet over medium heat and cook each sandwich for 3 to 4 minutes on each side. Repeat with each sandwich.
